Tofu bites

I made this for my step-daughters since they are both vegetarians and they loved it. Even the non-vegetarians liked it! It is very simple and can be embellished with any ingredient.

1 Package of Cream Cheese
1 Package of DRY vegetable soup mix
1 chunk of Tofu (not extra firm) I used a chunk about the size of my palm.
2 cans of crescent rolls

Let the cream cheese sit out for about 30 minutes before you make it so it will get soft. Mix the cream cheese, dry soup mix, and tofu with a blender or by hand until smooth.
Lay out the crescent rolls and fill the center with 1-2 spoonfulls of the mixture. Wrap the edges around and seal with your fingers to make a pocket. Bake according to directions on the can.

This recipe is originally my husband's recipe for "Chicken squares" which is chicken, cream cheese, chives, and crescent rolls. It can be made into just about anything. Enjoy!

Money Saving Tip

I was recently turned on to a really cool website called shortcuts.com. It is a site where you can download FREE grocery coupons to your loyalty shopping card (aka your Kroger card). It is very easy to set up. First, go to shortcuts.com and register your email and grocery store loyalty card. There are several different stores to choose from, but Kroger is the only one listed that is around these parts. You can then view all coupons and add the ones you want and they download to your card. No clipping and keeping up with coupons! Although it is up to you to make sure they get applied at the checkout line. You can also print off what coupons are on your card or create a shopping list with your coupons added to it. I'm still figuring it out, but I think it will be my new best friend! You also have to check back with the site periodically to see what new coupons have been added and sometimes they even send you an email to update you on new coupons.
